Sustainable Selections

The Sustainable Selections feature aims to focus on sustainably produced products currently on the market. The tasting is hosted and written up by Jeremy Day owner of Cafe Taste,, a wine and cheese focused facility on Queen St. West in Toronto and head judge of the 2011 Royal Ontario Wine Competition. Jeremy is an expert when it comes to selecting and experimenting with food and wine, and he is a self-proclaimed wine-geek! Enjoy!

In summer 2011, we launched Sustainable Selections we presented two wineries, one in Ontario and one in France, supported by French and Ontario cheese selections. In the Fall Issue, we turn the focus on Ontario cheese makers and pair their wares with our expert, Jeremy’s, wine choices.

Sustainable Selections – Fifth Town Artisan Cheese Co.

Cheese is the second oldest culinary family after wine. Both occurring naturally (albeit highly benefitted with guidance from affineurs and winemakers), and both are delectable together because the natural acids in the wine react with vestigial fats of cheese. Quite literally, the two were made for each other, and when done sustainably and in a “vin naturel” style, we can really appreciate the terroir of both.

Sustainable Selections – Southbrook Vineyards & Domaine Magellan

The Sustainable Selections feature aims to focus on organic, and sustainably produced products currently on the market. This premier Sustainable Selections editorial, released in the Summer 2011 Issue, showcased an Ontario, Niagara region winery, Southbrook Vineyards, alongside a French, Languedoc region winery, Domaine Magellan. In this piece, you’ll find an overview of each producer, which details how they have striven to implement organic and sustainable practices. Three each of their wines are presented with tasting notes. Each winemaker introduced a new wine to the Ontario market for the first time through our tasting. We have also included suggested Ontario and French cheese pairings for your gastronomical pleasure!
