Sterling Vineyards Cabernet Sauvignon

This Californian wine contains both sulfites and organically-grown grapes. However, the vinter does not appear to go above and beyond with its environmental management practices. This wine is available at LCBO Vintages and via online ordering.

Tasting Notes:

All the classic features of California Cabernet Sauvignon combine with an earthiness that adds a note of complexity, backstopping coffee notes under a canopy of plum and cassis.  While not overly forceful, this cab stages a subtle evolution on the palate with fruit and dates being followed by a touch of licorice and wood surrounding around enough tannin that this one is worth cellaring for a couple of years.
